Recipe Review 1 - Eight Layer Casserole

I know the looks a mess, but yall this dish was sooooo good! So much so, I forgot to take a picture until we'd eaten most of it.

I got this recipe from recipe.com and cooked it up today.  I only made slight adjustments (adding seasoning to every step). It was pretty simple and quick.....a change from the same old lasagna.

Mr Angie loved it too. He ate a big plate of it and took some to work for dinner. Winning!

I would make it again. I think I would double the recipe and freeze half of it for later. There were a lot of steps to go through for the small pan, might as well make two and freeze one.

Bonus: this is a good way to get picky eaters to eat a little spinach. : )

Baaaaaby,I'm Living!!!!

 I'm loving using my herb garden.

I've always wanted to use herbs from my own garden to cook with - and now I am! I'm starting with Mother of Thyme, Swiss Spearmint, and Greek Oregano. (Pictured above.)

I picked some fresh spearmint this morning and brewed it into tea. So refreshing!

Here a some pictures of the process.
Pick and wash leaves in cool water.

Chop leaves coarsely and place in tea infuser.

Steep for 3 to 4 minutes.
